This is such a quick and easy breakfast casserole that your whole family will absolutely love! It may even become your favorite! I mean, all you really do is cube ingredients and layer them within a casserole dish! Yes, THAT easy!! :) ENJOY!!
Blueberry Breakfast Casserole recipe
- 2 c fresh blueberries
- 8 large eggs, beaten
- 1/4 c maple syrup
- 1 loaf french bread, 1" cubed
- 1 and 1/2 c milk
- 4 oz cream cheese, cubed
- 1/4 c butter, melted
- cooking spray
Preheat oven to 350 degrees and lightly spray a 9x9" baking dish.
Place half cubed bread in the dish, then evenly place the cream cheese cubes and 1 c of the blueberries over the bread.
Next, add the remaining bread cubes and blueberries on top.
In a medium-sized bowl, combine eggs, milk, syrup, and butter, then slowly pour mixture over bread.
Cover casserole with foil and bake for approximately 45 minutes.
Insert a tooth pick in the center of the casserole; when the toothpick comes out clean, remove the foil and place back into oven just to brown casserole on top.
Let cool slightly and serve warm with extra maple syrup on the side!
