Ham and Swiss Bread Pudding recipe

This is SUCH a tasty savory bread pudding that everyone in your family will love!  Sometimes we all want a break from those “uber” sweet french toast casseroles, so this is a great alternative to switch up your weekend breakfast dish for something that won’t sit so heavy!  :)  I love how the flavors really mended together to bring in one tasty disk that was yummy wish a side of fresh fruit!  The best part?  It’s so easy to make!!  :)  ENJOY!

Ingredients

  • Cooking spray
  • 1 and 1/4 c green onions, chopped
  • 3/4 c ham, diced
  • 2 garlic cloves, chopped
  • 7 Hawaiian bread rolls, cut into 1/2" cubes
  • 1 and 3/4 c milk
  • 3/4 c egg substitute
  • 2 tbsp Dijon mustard
  • 1/4 tsp salt
  • 1/4 tsp freshly ground black pepper
  • 1/8 tsp ground nutmeg
  • 3/4 c shredded Swiss cheese, divided

Instructions

Heat a small nonstick skillet coated with cooking spray over medium-high heat and add onions, ham, and garlic to saute for 5 minutes; remove from heat and cool.

Preheat oven to 350 degrees and arrange bread cubes on a baking sheet.; bake cubes for 15 minutes or until lightly browned, turning occasionally.

Combine milk and next 5 ingredients (milk through nutmeg) in a large bowl, stirring with a whisk until well blended.

Then stir in ham mixture and add bread, tossing gently to coat.

Arrange half of bread mixture in an 8-inch square baking dish coated with cooking spray, then sprinkle with half of cheese.

Top with the remaining bread mixture and bake at 350 degrees for 25 minutes.

Sprinkle with remaining cheese and bake an additional 20 minutes or until set.
