Crockpot French Onion Chicken recipe

Need an easy recipe to make for a special occasion?  One that tastes like you’ve been slaving away for HOURS over a hot stove, but really you didn’t break a sweat?!  Then this is the recipe for you!  I made this tasty dish for mom for Mother’s Day last year and it was definitely a HIT.  It was so yummy and flavorful!  Even I was surprised!  :)  ENJOY!!

  • 1/4 c butter
  • 2 medium sweet onions, thinly sliced
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp thyme
  • 4 boneless skinless chicken breasts, cut into 1" pieces
  • 3 tbsp cornstarch
  • 2 tsbsp water
  • 6 dinner rolls, cut in half
  • 1/2 c Swiss cheese, shredded



In 12-inch nonstick skillet, melt butter over medium heat and add onions, salt, pepper and thyme to cook for 8 to 10 minutes (stirring occasionally until onions are soft and golden brown).


Spoon onions in crockpot, then top with chicken and cook on low for 2 to 3 hours or until chicken is no longer pink in center.


When chicken is done, in small bowl stir cornstarch and water until well blended then add to crockpot and cook on high heat setting 5 to 8 minutes or until thickened.


Meanwhile, set oven to broil and line cookie sheet with foil; arrange rolls halves in single layer on cookie sheet and sprinkle evenly with cheese.


Broil rolls 2 to 3 minutes or until cheese is melted and edges are golden brown.


Serve together!
