I love a good potato salad recipe…and I love potato salads that use red skinned potatoes!  I don’t know why, but I think they just taste so much better!  That creamy-ness of the red skinned potato is just delicious!!  We’ve made this particular recipe a few times…and even when we feel like we just have a taste for homemade potato salad.  Those store bought ones just never do the trick.  :)  This one is quite the different take than a traditional recipe, but I do think you’ll enjoy it!!  :)

Ingredients

  • 6 medium red potatoes, peeled and chopped
  • 1 tsp butter
  • 1/4 tsp salt
  • 1 c mayonnaise
  • 1 hard-boiled egg, chopped
  • 1 small bell pepper, chopped
  • 1 small onion, chopped
  • 1 c sweet pickles, chopped
  • 1 tsp dry mustard

Instructions

Cover potatoes with water in 4-quart saucepot and add butter and salt.

Bring to a boil over high heat, then reduce heat to low and cook 10 minutes or until potatoes are tender; drain and cool slightly.

Combine mayonnaise with remaining ingredients and gently toss.

Add more seasoning, if desired, with salt and black pepper.

Serve chilled or room temperature.
