I LOVE me some French Toast and I love different ways to try to make the French Toast at home…because lets be honest, it’s so easy to throw it all together, refrigerate, and then bake the next morning when you’re ready for breakfast! This new and improved way to have French Toast will surely be a hit with all the kids, young and old! I mean, who doesn’t love muffins?! The best part? The leftovers are awesome for crazy, hectic mornings! ENJOY!
French Toast MuffinsPrint Recipe
- 1 loaf French bread, 1/2" cubes
- 2 and 1/2 c milk
- 6 large eggs
- 1/2 c granulated sugar
- 1 tbsp vanilla extract
- 1 tsp ground cinnamon
- Streusel Topping:
- 1/4 c cold butter
- 1/4 c light brown sugar
- 1/4 c flour
- 1/8 tsp ground cinnamon
- Pinch of salt
Grease a 12 cup muffin tin; then add about 1 cup of bread cubes to each muffin cup.
In a medium bowl, whisk together milk, eggs, sugar, vanilla, and cinnamon; then carefully pour egg and milk mixture evenly over each muffin tin.
Try to press down on the bread cubes after you pour a little mixture and then pour more.
Cover the muffins with plastic wrap and refrigerate for 2 hours or up to overnight.
When ready to bake, preheat the oven to 350 degrees.
To make the cinnamon streusel, in a small bowl combine butter, brown sugar, flour, cinnamon, and salt; then mix together with your hands until you have a crumbly mixture.
Remove the muffins from the refrigerator and sprinkle the muffins evenly with the streusel topping.
Bake for 25 minutes or until tops are golden brown; let muffins cool for 5 minutes before serving!
