This is one of those recipes that make me feel fancier than I really am! It has unique and bold flavors and is one of the dishes I love a little bit more every time I make it. The other thing I love about it is that it is a totally versatile recipe. Like many of the recipes we post on our blog it can pull double duty. This salad can be served as a light lunch, or a side for a hearty dinner. When you add chicken and you have an entire dinner in itself! Serving it cold makes it perfect for spring and summer, but the heat in the spice makes it nice for cooler months too!
The recipe is simple and can be prepared in advance to save time!
First boil your pasta. While that is cooking prep and chop your veggies.
Next you will want to make the sauce. I like to use the shake cup that my husband has to make his protein shakes because I can just put everything in and shake to combine. It works like a charm everytime! If you don’t have one you can use a dressing maker (this dressing maker from Pampered Chef is my FAVORITE) or just an old fashioned bowl and whisk.
I heat the water to help dissolve the bullion more easily. Add bullion and combine. Add peanut butter, soy sauce, garlic and pepper flakes and mix until combined.
Drain the pasta and place in a large bowl. Pour the sauce over the pasta and add the onions, bell pepper, and cilantro then mix well.
Place in the fridge for at least 2 hours or overnight. To serve remix the pasta to redistribute the sauce and serve cold.
Like I said, this recipe isn’t your average 4th of July pasta salad but it is amazing! Even with the bold flavors believe it or not, both my kids love it! I mean look at those colors! Who wouldn’t like this?! The recipe makes quite a bit so if you aren’t feeding a crowd and don’t want leftovers you might want to half it. Chinese Pasta SaladPrint Recipe
- 16 oz Bowtie Pasta
- 3 Green Onions, chopped
- 1 Red Bell Pepper, Chopped
- 1 Bunch Fresh Cilantro, finely chopped
- 1 C Hot Water
- 1 Bullion Cube or Eqiv Granules
- ¼ C Peanut Butter
- ¼ C Soy Sauce
- 3 Tbsp Jarred Chopped Garlic
- 1 tsp Red Pepper Flakes (optional- more or less to taste)
- OPTIONAL- 3-4 Chicken Breasts, cubed or shredded
Cook pasta according to package directions.
While pasta is cooking prep and chop onions, pepper, and cilantro.
To make sauce combine water, bullion, peanut butter, soy sauce, garlic and pepper flakes. Mix well until combined.
Drain pasta and put in a large bowl. Add sauce and peppers, onions, and cilantro and mix well.
OPTIONAL- Add 3-4 chicken breasts, shredded or cubed to make a main dish.
Chill for minimum 2 hours or overnight.
To serve toss pasta to evenly distribute sauce and serve cold.
