This Cranberry-Apple Cashew Salad recipe is a yummy side salad that a co-worker of my mom’s had made years ago. Mom then made it for a family function and it’s been one of our favorites ever since! :) It’s SO delicious, and it has to be healthy, right? I mean what’s better? You have your fruits AND your veggies! :) This salad is especially when apples are in season, or even in the wintertime when you’re looking for that spring/fall freshness! :) This recipe you can add as little or as much of each ingredient as you’d like! It would be amazing as a side dish, and top it with Chicken to enjoy it as a main dish. - dried cranberries
- granny smith apples, diced
- cashews, halved
- mozzarella cheese, shredded
- poppy seed dressing
Add all ingredients in a bowl and top with dressing!
