Many of you probably constantly have some leftover mashed potatoes and really don’t know what to do with them; well this is the perfect recipe for you! I don’t know about you, but plain old leftover mashed potatoes do not excite me at all because the texture completely changes when you warm them back up. However when we made this Mashed Potato Cakes recipe, they were completely DELICIOUS! :) ENJOY!
Leftover Mashed Potato CakesPrint Recipe
- 2 c leftover mashed potatoes, chilled
- 2 tbsp vegetable oil
- 2 tbsp unsalted butter
- 1/2 c flour
- 1.5 tsp kosher salt
- 1/4 tsp black pepper
Divide the mashed potatoes into 8 equal portions; use your hands to form 1/2" thick patties.
Heat the oil with the butter in a large nonstick skillet over medium-high heat until almost smoking.
Mix the flour with the salt and pepper in a pie plate; coat the potato patties in the flour mixture.
Add the potato cakes to the pan and reduce the heat to medium-low.
Cook until they have formed a golden crust (15 to 20 minutes).
Turn and cook the other side until golden brown, about 15 minutes.
Season with additional salt and pepper and serve hot.
