Turkey Meat Loaf with Walnut-Parsley Topping recipe

I’m a big meatloaf fan and lately I’ve been loving substituting Turkey for beef, so when we found this recipe, we had to try it!  It was SO light and flavorful.  I LOVED it.  Not to mention that it’s pretty healthy!  :)  ENJOY!

Turkey Meat Loaf with Walnut-Parsley Topping

Ingredients

  • Nonstick cooking spray
  • 2 egg whites
  • 1/3 c rolled oats
  • 1/4 c dried tomatoes (not oil-pack), finely chopped
  • 1/4 c onion, finely chopped
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 8 oz extra-lean uncooked ground turkey breast
  • 1/3 c fresh Italian parsley, snipped
  • 1/4 c walnuts, chopped
  • 2 tsp olive oil
  • 1/2 tsp lime zest
  • 1 tbsp lime juice
  • 1/8 tsp salt

Instructions

Preheat oven to 375 degrees; line baking pan with foil and coat foil with cooking spray.

In a large bowl beat egg whites with a fork; stir in rolled oats, dried tomatoes, onion, the 1/2 teaspoon salt, and the pepper.

Add ground turkey; mix well.

Divide meat mixture into four equal portions; shape each portion into a 4-inch oval that is about 2 1/2 inches wide in the center.

Place in the prepared baking pan, leaving 2 inches between ovals and bake 20 minutes or until done.

Meanwhile, in a small bowl combine parsley, walnuts, oil, lime peel, lime juice, and the 1/8 tsp salt.

To serve, transfer each meat loaf to a serving plate; top evenly with parsley mixture.
