We all know there’s 101 ways to cook chicken, however I have to admit that this way is pretty tasty! Now, I will warn you that if your jalapenos are spicy, the meal will be a bit *bitey*. However it really does give you a way to use some fresh ingredients when you have an abundance of them in the summer time! I really loved how this turned out and I would even serve this over some white rice the next time I make it. :) ENJOY!
Spicy and Delicious Asian Jalapeno ChickenPrint Recipe
- 1 tbsp vegetable oil
- 1 lb boneless, skinless chicken breasts, cut into 1" chunks
- salt and freshly ground black pepper, to taste
- 1/2 tsp sesame seeds
- 2 tbsp fresh cilantro leaves, chopped
- 1 tbsp cornstarch
- 1/2 c honey
- 2 cloves garlic, minced
- juice of 1 lemon
- 2 tbsp soy sauce
- 1 tbsp apple cider vinegar
- 1 tsp sesame oil
- 1 jalapeno, thinly sliced
Heat vegetable oil in a large skillet over medium high heat while you season chicken with salt and pepper, to taste.
Add chicken to the skillet and cook until golden (about 2-3 minutes); set aside.
In a small bowl, combine cornstarch and 1 tablespoon water; set aside.
Then in a small saucepan over medium high heat, combine honey, garlic, lemon juice, soy sauce, apple cider vinegar, sesame oil, and jalapeno.
Bring to a boil; reduce heat and stir in cornstarch mixture until slightly thickened, (about 2-3 minutes).
Stir in chicken and serve immediately and garnished with sesame seeds and cilantro.
