I really like to experiment with Ramen Noodles for lunch. I’m a huge fan of them to begin with (don’t judge), but if I can make them better and taste different from the typical Ramen, then I’m all for it! :) I came up with this over the summer when we had some fresh veggies lying around. The green onions really get sweet and totally change the flavor of the noodles! :) OH my goodness, is it ever delicious! :) The best part is that this meal is super cheat; very cost effective and can honestly go a long way. The noodles definitely fill you up if this is going to end up being your lunch, while the asparagus and onion add that veggie factor to somewhat make this a “healthy” recipe! I feel like this could definitely be a “soup” that you could serve with a half sandwich and it’s something that everyone will love on a nice spring, fall, or winter day! :) This is a GREAT quick meal for lunch, so ENJOY!
