Double Chocolate Zucchini Muffins recipe

I’m not a HUGE Zucchini fan, but I do love to add it to tasty desserts and these muffins are no different.  I mean, then HAVE to be healthy, right?!  There’s Zucchini in them!  Nevermind the “double chocolate” aspect of it.  :)  Seriously though, these are so tasty and yummy that your kids will be asking for more!  Enjoy these for breakfast or even dessert!  :)

Double Chocolate Zucchini Muffins

  • 3 eggs
  • 2 c granulated sugar
  • 1 c vegetable oil
  • 1/3 c unsweetened cocoa powder
  • 1 and 1/2 tsp vanilla extract
  • 2 c grated zucchini
  • 3 c flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp salt
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 c semi-sweet chocolate chips



Preheat oven to 350 degrees and lightly grease or line two 12 cup muffin tins with paper liners.


In a large bowl beat together eggs, sugar and oil; then add cocoa, vanilla, zucchini and mix well.


Stir in flour, baking soda, baking powder, salt, cinnamon and nutmeg; mix until just combined.


Fold in chocolate chips, then pour batter into prepared muffin tins 2/3 of the way full.


Bake for 20-25 minutes, remove from oven and let cool before serving.
