My mom received a Pressure Cooker not too long ago and it was something that neither of us have played with, so this was the first recipe we made. Talk about easy, quick, and SO delicious! I do have to admit that we were a tad nervous about using the Pressure Cooker, but looking back on it, I have no idea why we were so nervous! LOL :) The leftovers were JUST as good too! :) ENJOY!
InstaPot Pressure Cooker Cheesy Chicken Broccoli RicePrint Recipe
- 1 tbsp vegetable oil
- 1 lb boneless, skinless chicken breasts, cubed
- 1 onion, diced
- 1 and 1/3 c white rice
- 1.5 c chicken broth
- 3/4 tsp salt
- 1/4 tsp pepper
- 1/4 tsp garlic powder
- 1.5 tbsp flour
- 1/2 c milk
- 1.5 c shredded cheddar cheese
- 2 c broccoli florets
Leave the lid off the pressure cooker for now; heat oil on high until sizzling.
Add the cubed chicken and onion; saute until chicken is lightly golden and onion is translucent.
Add rice, chicken broth, salt, pepper, and garlic powder; secure the lid and leave it locked for 5 minutes on high.
Perform a quick release to release the cooker’s pressure.
Whisk together the flour and milk.
With the cooker’s lid off, set to high and add in flour mixture and broccoli; simmer for 2 minutes.
Stir in cheddar cheese and cook for 2 more minutes or until combined and broccoli is warm throughout.
