You will never guess that these potatoes were made in the crockpot!! They don’t taste anywhere near bland, soggy, or crockpot-ish! They have so much flavor that you’ll swear they’re roasted! Yes, you could stick these in the oven and yes you could roast them in the pan…however…we all know that sometimes we just need some extra help during our busy lives! Crockpot Garlic Thyme PotatoesPrint Recipe
- Cooking spray
- 1 and 1/2 lb mini potatoes
- 20 cloves garlic, peeled
- 1 onion, sliced
- 2 tbsp lemon juice
- 1/8 c water
- 1 chicken bouillon cube
- 1 tbsp thyme
- salt and pepper, to taste
Grease a 6 quart slow cooker with cooking spray.
Add in chicken bouillon cube, lemon juice, and water to cooker and top with onions.
Then add potatoes and garlic, thyme, and salt and pepper.
Cover and cook on low for 8 hours or high for 4 hours.
